Red Lentil Sweet Potato Fritters

Makes: 20 fritters // Time: 1 hour + chill time

Ingredients 

  • 3 small sweet potatoes
  • 2/3 cup red lentils (1/4 cup uncooked)
  • 1 large shallot, chopped
  • 2 garlic cloves
  • 2 tbsp miso paste
  • 1/4 cup fresh parsley, chopped
  • 3-4 tbsp chickpea flour
  • 2 tbsp ground flaxseed
  • 4 tbsp water
  • 2 tbsp lemon juice
  • Sea salt and pepper, to taste
  • Tahini Drizzle
  • 2 tbsp tahini
  • 2 tbsp fresh herbs
  • Juice of one lemon
  • 1 tsp miso paste

Tahini Drizzle: 

  • 2 tbsp tahini
  • 2 tbsp fresh herbs
  • Juice of one lemon
  • 1 tsp miso paste

Method 

  1. Preheat your oven to 400°F. Prepare sweet potatoes on a baking tray by laying them side by side. Bake for 30-40 minutes or until soft.
  2. Add sweet potato, skinned, to a large mixing bowl. Next, add the rest of your ingredients and mix until well incorporated. Taste and adjust salt and pepper.
  3. Roll out the mixture into 20 small patties and let these chill in the fridge for 30 minutes.
  4. Meanwhile, prepare the drizzle by adding all ingredients to a small food processor and pulsing until smooth.
  5. To cook the fritters, heat a cast iron skillet over medium heat with one tablespoon of avocado oil. Add 4-5 fritters to the skillet and cook each side for 2-3 minutes. Serve hot over a salad with drizzle overtop.
