I N G R E D I E N T S
- 3 garlic cloves, minced
- 1 shallot, diced
- 1 tbsp miso paste
- 1 bunch broccoli, roughly chopped
- 1 bunch Swiss chard
- 2 wild caught salmon fillets
- 2 tbsp olive oil, separated
- Sea salt Lemon glaze: Juice of one lemon
- 1 tbsp fresh basil, chopped fine
- 1 tbsp olive oil
- 1 tsp honey (or Flora Mānuka Honey)
- 1/2 tsp tapioca starch
- 1/4 red onion, chopped finely for garnish
Method
- Preheat your oven to 300°F. Lightly salt salmon fillets (about 1/4 tsp sea salt). Set aside. Add glaze ingredients to a small bowl and whisk together.
- In an oven safe skillet add 1 tbsp oil, garlic, shallot and miso paste over medium heat, until fragrant. About 3 minutes.
- Add broccoli and toss for one minute, then remove from heat and add chard, tossing again.
- Lay salmon fillets on top of vegetables in the skillet. Use the other tablespoon of oil to drizzle over top of salmon and veggies. Finally, drizzle about half of the glaze over the salmon and veggies.
- Bake for 20 minutes, until salmon is cooked through. Remove from the oven and serve with extra glaze and diced red onion.
