Ingredients

Dressing

  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 4 sundried tomatoes, chopped
  • 2 cloves garlic, minced
  • 5 fresh basil leaves, chopped finely (or 1 tsp dried)
  • 1 tsp dried oregano
  • 1/4 tsp sea salt
  • Pepper to taste

Salad

  • 1 English cucumber, shaved into ribbons
  • 1 cup cherry tomatoes, halved
  • 1/2 a red onion, chopped
  • 1/2 cup black olives
  • 1/3 cup feta cheese

Method

  1. Add all dressing ingredients to a small jar. Close the jar and shake it to combine. Set aside.
  2. Prepare the salad ingredients and separate them onto two plates.
