This vibrant salad marries the tanginess of apple cider vinegar with the rich, complex notes of sundried tomatoes and herbs, creating a perfect dressing to drape over crisp cucumber ribbons and juicy cherry tomatoes. Paired with the saltiness of black olives and creamy feta cheese, this salad is an inviting option for a light entrée or a side dish. Optional protein additions like tofu or chicken can enhance its satisfying nature while keeping it cleanse-supportive and refreshing.
