Makes 6-8 bars
- ½ cup cashews
- ½ cup pumpkin seeds
- ½ cup rolled oats
- 2 tbsp pumpkin purée
- 2 tbsp almond butter
- 2 tbsp Manuka Honey
- 1 tsp pumpkin pie spice or cinnamon
- Add all ingredients to a blender or food processor.
- Blend until combined. Press mixture into an even layer in a parchment-lined pan.
- Freeze for 10-15 min. Cut into bars and enjoy! Store in the fridge or freezer.
