Delicious Date Bars (Two Ways)

These bars are versatile, offering two delightful variations: decadently rich Red Velvet Bars infused with peanut butter and cacao, and subtly sophisticated Salted Almond Bars with a touch of sea salt. Each bite of these energy-boosting bars delivers wholesome ingredients, from fiber-rich dates to nutrient-packed almonds, supporting your body's cleansing journey with every chew. Makes 12 small bars // Time: 15 minutes + chilling time

Base Ingredients

  • 1 heaping cup pitted dates
  • 2/3 cup raw almonds
  • 1 tsp cinnamon

For Red Velvet Bars, add:

  • 3 tbsp peanut butter
  • 2 tbsp Flora Red Beet Crystals
  • 2 tbsp raw cacao powder
  • 1 tbsp vanilla extract

For Salted Almond Bars, add:

  • 3 tbsp almond butter
  • ½ tsp flaky sea salt + more for topping
  • 2 tsp vanilla extract

Method

  1. Preheat your oven to 350 ºF. Add almonds to a baking sheet and bake for 10 minutes.
  2. Meanwhile, soak pitted dates in hot water for 10 minutes.
  3. Add roasted almonds to a food processor and pulse until crumbly, but not too fine.
  4. Add dates, cinnamon as well as the rest of your ingredients to the food processor.
  5. Blend until well incorporated, scraping down the sides as needed. The mixture should be soft and malleable, but not too sticky to handle.
  6. Line a standard loaf pan with parchment paper. It may help to add a little bit of coconut oil underneath the parchment to help it stay put.
  7. Use a spatula to empty mixture into the loaf pan and press down evenly. Let this chill in the freezer for 30 minutes.
  8. Remove from freezer and slice into 12 bars, then garnish as desired. For the red velvet bars, I garnished with extra cacao powder. For the salted almond bars, I garnished with slivered almonds and extra flaky sea salt.
  9. Keep at room temperature for two days or in the fridge for one week.
