½ cup + 2 tbsp oat milk
2 tbsp chia seeds
1 tsp Udo’s 3+6+9 Oil Blend
1 banana, sliced
½ tbsp coconut oil
3 tsp maple syrup
- Combine chia seeds, oat milk and Udo’s Oil in a glass jar. Stir and set aside.
- Heat coconut oil over medium heat in a skillet. Add sliced banana and maple syrup. Let the banana caramelize, then flip each slice over to check that they’ve browned on the under side. This is a sign they’ve gained some caramel flavour. Let the other side caramelize, which should take half as long as the first side.
- Remove from heat and using a fork, mash half of the banana slices. Reserve the other half, leaving them sliced. Add the mashed banana to the chia mixture and stir well. Refrigerate for 30 minutes or overnight.
- Serve with reserved caramelized banana slices and brown sugar.
