Stir "Fry"

Makes four 1-cup servings

For variety, try gai lan (Chinese broccoli) or kale in place of the broccoli. Select whatever looks fresh and inspiring! The addition of some firm tofu will boost the protein content and turn this simple dish into a main course.

Ingredients:
1 cup water
1 lb. broccoli, cut into 1 ½” pieces
1 ½ cups red or yellow bell pepper, cut into 1 ½” pieces
½ large onion, sliced (approx. 1 cup)
½ cup snow peas
¼ cup water chestnuts, sliced
1 clove garlic, minced
2 tbsp. tamari or light soy sauce
¼ cup Udo’s Oil Blend

Instructions:
1. In a large pan, add water and bring to a boil.
2. Add broccoli, peppers, and onions. Cover and cook until broccoli is tender-crisp (approx. 5-7 minutes).
3. Drain vegetables well.
4. Mix together garlic, tamari, and Udo’s Oil Blend.
5. Pour over vegetables and toss.
