Protein Packed Tomato Sauce

1/4 cup dry lentils (1/2 cup cooked)
1/2 28 oz can fire-roasted tomatoes + reserve more
6 cloves garlic
1/2 a hot pepper
1/4 tsp cumin
1 tbsp oregano
1 tsp parsley
1/2 tsp salt (to taste)
Pepper to taste
2 tbsp Udo’s Oil 3+6+9 Blend
- Cook lentils if required according to package directions. Drain and let them cool.
- In a blender, add all ingredients except for Udo’s Oil. Blend until creamy, then heat in a saucepan over a stove. Taste and adjust seasoning. Remove from heat and stir in Udo’s Oil.
- Serve with pasta noodles, zucchini noodles, meatballs or whatever you desire. This tomato sauce can be used for so many recipes for an extra serving of protein. The list is endless.
Keeps well refrigerated, however if you’re making ahead of time, wait until ready to serve to add Udo’s Oil
