More dried coconut, medium or fine, unsweetened (for rolling)
Place everything in a food processor (or similar) and blitz until a uniform moist crumb forms, pausing to free the blades as you go. If it’s too thick for your machine, you may need to blitz each item separately from driest to wettest, then assemble in a bowl.
Once the mixture comes together well, shape into balls.
Roll in coconut until coated.
Keep refrigerated in an airtight container for up to 7 days or freeze for up to 3 months.
