Squash Bowl Breakfast – Sweet or Savory?

Squash

Ingredients

    Sweet version
  • 1 acorn squash
  • 1 tbsp oil (coconut, olive, avocado)
  • 1/4 teaspoon cinnamon
  • pinch of sea salt
  • 1/2 cup dairy-free yogurt
  • 1 teaspoon honey
  • 1/4 teaspoon Salus Red Beet Crystals (optional, for color)
  • **Top with: berries, extra drizzle of honey, nuts, seeds, granola etc.
    Savory version
  • 1 acorn squash
  • 1 tbsp oil (coconut, olive, avocado)
  • 1/4 teaspoon garlic powder
  • pinch of sea salt
  • 1/4 cup dairy-free yogurt
  • 1 garlic clove
  • 1 teaspoon olive oil
  • 1 teaspoon Flora Green Blend / Beyond Greens
  • **Top with: soft boiled egg, avocado, everything bagel seasoning, watermelon radish, minced
  • chives etc.

Instructions

    Sweet version
  1. Preheat oven to 400 degrees F.
  2. Cut squash in half and remove the seeds. Coat the squash in the oil and spices and place flesh down on a parchment lined baking sheet.
  3. Bake for 20-30 minutes, or until squash is soft. Remove from the oven and set aside to cool.
  4. In a small bowl, mix together the yogurt, beet crystals (optional), and honey. Scoop the yogurt into the squash and top with berries, granola etc.
    Savory version

  4. In a small bowl, mix together the garlic, olive oil, sea salt, fermented greens powder, and yogurt. Add the dollop of yogurt sauce to the squash, along with other savory breakfast favorites, like avocado slices, soft boiled egg, chives, radish, etc.
