Green Smoothie by Ellie Greenwood

I start practically every day with a homemade green smoothie. I find it’s a delicious and easy way to start the day with a punch of vitamins and nutrients. It ensures that I get a good dose of veggies without even thinking about it. A homemade smoothie also avoids the wasteful single-use plastic bottles that store-bought versions generate. If mornings are busy for you, prepare your smoothie the night before, store in the fridge, and simply blend in seconds when you wake up. Voila! A great energy boost to get you ready for work or your workout! I use a small blender, such as a NutriBullet. This is perfect for a single-serve smoothie and the screw-on lids mean you can even take your smoothie to go. A small blender is especially ideal if you live in an apartment and have limited counter space in your kitchen. Washing up is super easy, too!!

The recipe below is my favorite, but variety is always good to avoid boredom and mix up the vitamins and minerals you are getting in your diet each day. If I run low on avocado, I am more likely to add soymilk instead of water. In the summer, fresh berries such as strawberries, blueberries, and raspberries are tasty. For fruit variety, all year round, buy berries in bulk from a local farm while they’re in season and freeze for use in the months to come.
