The biochemistry of health is complex, but the basic nature of health is simple. Most degenerative diseases result from three controllable causes:

The Man behind the Health Plan
Udo Erasmus received his B.Sc. in Honors Zoology, from the University of British Columbia, followed by graduate studies in Biochemistry and Genetics.

What are essential fats?

Scientists have given essential fats (a.k.a. essential fatty acids or EFAs) their name because the body must have them to survive, but cannot synthesize them from any other substance we eat, so a direct food source is required. There are many kinds of fats, but only two essential fats: omega 3 (n-3) and omega 6 (n-6). Each EFA is turned into several derivatives by the body, provided enough n-3 and n-6, in the right ratio, and made with health in mind, are supplied.
All other fats, such as n-9 (monounsaturated) and saturated fat, are non-essential because the body can produce them from sugars and starches.
| Sources of essential fats
Sources of n-3s are flaxseeds, green leafy vegetables, and high fat, cold water fish (for n-3 derivatives EPA and DHA). N-6 is found in sesame and sunflower seeds, land animal meats (n-6 derivative AA), and other seeds and nuts.
Why are essential fats good?
Essential fats play many vital roles in the complex workings of the human body. They:

Increase energy, performance, and stamina. EFAs help build muscle, prevent muscle break down, and speed recovery from fatigue.
Strengthen the immune system. EFAs make hormone-like eicosanoids that regulate immune and inflammatory responses. N-3s have anti-inflammatory effects, can slow auto-immune damage and inhibit the growth and spread of tumors.
Lower most risk factors for cardiovascular disease. EFAs (especially n-3s) lower abnormally high levels of blood pressure, triglycerides, Lp(a), fibrinogen, tendency to clot formation and inflammation, and regularize heartbeat.
Improve brain function: mood, intelligence, behavior, and vision. Our brain is over 60% fat, and EFAs are important components of the entire nervous system. They are necessary to make the neurotransmitter serotonin. Depression, hyperactivity and other brain problems show decreased levels of n-3.
Regulate organs and glands. Liver and kidneys, adrenal and thyroid glands, and the production of male and female hormones need EFAs.
Speed recovery and healing. EFAs are necessary for cell growth and division. They form all cell membranes and regulate vital cell activity.
Support healthy child development. For nervous system development, a growing fetus needs optimum EFAs from the mother's body. Mothers become depleted of EFAs during pregnancy, and need optimal EFA intake for their health and their children's optimum development.
Improve digestion. Poorly digested foods tie up the immune system and can cause inflammation, leaky gut and allergies. N-3s improve gut integrity, and decrease inflammation and "leaky gut".
Decrease infection. EFAs have anti-fungal, anti-yeast, and anti-microbial properties, helping to protect against infections.
Keep bones strong. EFAs aid in the transport of minerals that keep bones and teeth strong, helping to prevent osteoporosis.
Aid in weight reduction. EFAs help keep mood and energy up, suppress appetite and promote both fat burning and thermogenesis, thereby aiding in weight loss.
Protect genetic material. EFAs regulate gene expression, and n-3s inhibit tumor growth.
Ease PMS. The n-6 derivative (GLA) intake was voted by women as one of the top three most effective PMS treatments. N-3s may be even more effective.
Produce beautiful skin, hair, and nails. Signs of EFA deficiency are dry, flaky skin, dull hair, and brittle nails. N-3s help skin conditions such as eczema, psoriasis, and acne.
By now, it should be clear that everybody needs essential fats.
Damaged and undamaged essential fats
Of all the essential nutrients, essential fats are by far the most abused because they are sensitive, perishable, chemically unstable foods, easily damaged by heat, light, and oxygen. Almost all supermarket oils, including the oils used in processed foods, have been damaged by destructive processing that involves treatment with corrosive acid, bleach and overheating. Hydrogenated oils, margarines and shortenings are more harmful than saturated fats; and frying can contribute to increases in both cancer and heart disease.
Oils, made with health in mind come from organically grown seeds. They are pressed under protection from heat, light, and oxygen; packaged in tightly sealed brown glass bottles and placed in a light-excluding box; then stored in the refrigerator. How to use essential fats

What are greens and where do they come from?

What are digestive enzymes?
Without enzymes, our body's chemical reactions would be too slow for life to exist. The human body makes and uses more than 3,000 kinds of enzymes that speed up (catalyze) chemical reactions and save energy. Only a few of the thousands of known enzymes are digestive enzymes (DEs). These break down the foods we eat into basic building blocks that our body then absorbs and reassembles to build cells, tissues, organs, glands, and body systems.

Where do DEs come from?
DEs come from two main sources:
1. Internal: The digestive system secretes a few DEs in the mouth and stomach, but most are secreted by the pancreas and small intestine cells, and
2. External: Foods that are raw, sprouted, or soaked (not destroyed by the heat that cooking generates).
During digestion, DEs from raw foods and DEs from the digestive tract work cooperatively. Most of the DE action initiated by our body starts once food enters the small intestine, whereas DEs from raw foods start to self-digest as soon as we start to chew our food, providing a valuable jump-start on the digestive process.
Why do we need DEs?
No matter what we eat, all our foods are made from the same basic building blocks: amino acids (proteins), fatty acids (fats), glucose (carbohydrates), and some others, each of which requires different breakdown enzymes. Protease digests proteins; lipase digest fats; amylase digests starch; etc. DEs have the following benefits:

Eat a diet rich in nutrients that optimize the function of our digestive system; and,

How to use DEs
Because enzymes are heat sensitive proteins, temperatures over 120 degrees Fahrenheit (or 50 degrees Celsius) destroy them. Cooked, canned, micro-waved, or pasteurized foods need DE supplementation.

What is fiber?
Fiber is indigestible material that provides health benefits by its effects inside of our digestive tract. Fiber comes in two main forms:
1. Water-insoluble, including cellulose, hemicellulose, and lignin; and
2. Water-soluble, including pectin, oat bran, and the most useful soluble fiber, mucilage.

Where does fiber come from?
Fiber comes mostly from plants. It makes their cell walls strong, and gives shape to trees, shrubs, grasses, and herbs. Animal products lack the fiber necessary for bowel health.
Fiber is richly supplied by:
Vegetables (but not by one-celled greens;
Whole grains (but not the white rice or flour made from them);
Unprocessed seeds and nuts (but not the oil products made from them);
The bran of rice and other grain;
Seeds like flax, psyllium, chia, and others (special mucilage fiber);
Mucilaginous herbs like slippery elm;
Several kinds of seaweed; and

What are probiotics?
The human gastrointestinal tract is home to more than 400 types of probiotics (a.k.a. friendly bowel bacteria, gut microorganisms, or intestinal flora). Where do probiotics come from?
During birth, probiotics from the mother's birth canal colonize the infant's gut, and thereafter are provided by mother's milk. After infancy, probiotics are supplied to us and to all other living creatures by raw foods which are coated with these bacteria.
When we cook, the probiotics that encase our foods are destroyed. Subsequently, to protect our gut, we need to take advantage of probiotic supplements to maintain gut health. Why do we need probiotics?
Unfortunately, the natural world also provides disease-causing microorganisms. About Udo Erasmus, Ph.D. Udo Erasmus is an internationally recognized authority on the role of fats, oils, and cholesterol in human health. He received his Bachelor of Science degree in Honours Zoology with a major in Psychology from the University of British Columbia, followed by graduate studies in biochemistry and genetics. Several years of research in the field of nutrition led to him write his first book, Fats and Oils, which earned him a Ph.D. in nutrition and was later expanded and republished as Fats That Heal Fats That Kill. |
